In today's dining scene, where many chefs crossbreed cuisines with impunity Grant Brown, the self-taught Executive Chef of Meritage of Philadelphia, offers a refreshing course in culinary coherence. His worldly menu is peppered with dishes that have roots everywhere from Barcelona (slow-cooked La Bomba rice with handmade chorizo) to the Casbah (Moroccan spiced duck breast with a sun-dried fruit and red wine sauce) to the Louisiana Bayou (bearnaise-drizzled razor clams Rockefeller).

Enjoy Brown's "fission" cuisine - as inquirer food critic Craig La Ban put in his 2004 three-bell review - in Meritage Philadelphia's swanky atmosphere that might just have you feeling like one of those wealthy Europeans on perpetual holiday. New proprietors Michele DiPietro (Sommelier at Buddakan and Smith & Wollensky) and Irene Landy (Happy Rooster & Tony Clark's) are pulling from years of experience, continuing the international wine list with many bottles under $60. Brown also offers four-course tasting menus (with or without wine), but don't miss the Tunisian Meritage, a Middle Eastern menage a trois of lamb.
